Back to Nature - Enjoying Time to Myself

I think it is important for us all to find time to ourselves for reflection and perspective. Time to get away, step back from life and look at where we are.

I'm nestled in the Blue Ridge Mountains right now. I'm alone and using this time to reflect.

The beauty of the morning has inspired me to share. :)

3 MINUTE CHOCOLATE MUG CAKE

I just now got this emailed to me... I'm going to try it this weekend (after I go grocery shopping)...

3 MINUTE CHOCOLATE MUG CAKE

1 Coffee Mug
4 tablespoons flour(that's plain flour, not self-rising)
4 tablespoons sugar
2 tablespoons baking cocoa
1 egg
3 tablespoons milk
3 tablespoons oil
3 tablespoons chocolate chips (optional) Some nuts (optional) Small splash of vanilla


Add dry ingredients to mug, and mix well . Add the egg and mix thoroughly. Pour in the milk and oil and mix well. Add the chocolate chips (if using) and vanilla, and mix again.


Put your mug in the microwave and cook for 3 minutes** on high. The cake will rise over the top of the mug, but don't be alarmed! Allow to cool a little, and tip out onto a plate if desired. EAT! (this can serve 2 if you want to share!)


And why is this the most dangerous cake recipe in the world? Because now we are all only 5 minutes away from chocolate cake at any time of the day or night

**NOTE: I've just googled this recipe (ah google) and found it posted in many recipe exchange boards. I've noted that the time varies from 2 minutes to 5 minutes but I have not seen any difference in the amount or type of ingredients. I assume the amount of time will vary according to the power of your microwave. Several 3 minute cakes are marked: "3 minutes (1000 WATTS)"... So keep this in mind when you are experimenting with your mug cake. =)
